Curried roast potatoes with sausage and mango dressing

Serves 6

180°C/Gas 4


1 packet of Hafner’s sausages

For the potatoes

750g baby potatoes

4 teaspoons Korma paste

3 tablespoons garlic or chilli oil

Pinch of Salt

To serve

120mls natural yogurt

30g mango chutney

A handful of finely chopped mint

3 roughly chopped tomatoes.


Dry fry the Hafner’s sausages in a non stick pan until thoroughly cooked.

Meanwhile, cut the potatoes in half and plunge into boiling salted water to cook for 2 minutes then drain. Mix the Korma paste, garlic oil and salt together then stir this mixture into the potatoes and coat well, tip the potatoes onto a non stick oven tray and roast in a hot oven for 25 minutes until crisp and golden.

Mix the yogurt, mango chutney and mint together to make the dressing.

Arrange the roast potatoes onto a plate, top with chopped tomato, sausages and drizzle with yogurt dressing before serving
