Picnic slice

Serves 12

180°C/Gas 4

Ingredients

1 tablespoon olive oil

1 onion, finely sliced

2 pink lady apples, grated with the skin on

150g dried cranberries

1 packet regular Hafner’s sausages, skins removed

100g fresh breadcrumbs

1 teaspoon mustard

1 sheet of shortcrust jus roll pastry, defrosted

1 egg, lightly whisked to make egg wash

Method

Line a large baking tray with baking parchment.

Gently heat the oil in a large frying pan and fry the onion until soft, add grated apple, dried cranberries and cook gently for 2 – 3 minutes. Remove the pan from the heat and mix the sausage meat, breadcrumbs and mustard into the mixture. It should look like stuffing.

Lay the defrosted sheet of shortcrust pastry onto a clean surface and lightly brush the edges with egg. Arrange the sausage mixture in a cylinder shape in the middle and roll the pastry around the mixture to make the picnic slice, it should look like a giant sausage roll. Lay the picnic slice onto the prepared baking tray, pastry seam side down, brush with egg wash and bake in a hot oven for 40 – 45 minutes until crisp and golden brown. Cut into slices and serve.
