Sausage toastie with sweet tomato relish
1 packet Hafner’s Recipe 77 sausages
1 Sourdough loaf, cut into 8 slices
12 slices Emmental cheese
Rocket or baby salad leaves
For the Relish
1 tablespoon olive oil
1 onion, finely sliced
2 garlic cloves, crushed
A pinch of chili flakes
4 tomatoes, roughly chopped
1 tablespoon of tomato puree
1 teaspoon sugar
2 tablespoons vinegar
Heat a little olive oil in a large pan over a medium heat and gently fry the onions until soft, add crushed garlic and chili flakes and continue to gently cook for 5 minutes. Add chopped tomatoes, tomato puree, sugar and vinegar and reduce the temperate to simmer for 10-15 minutes, or until the relish has thickened. Allow to cool before serving.
While the relish is cooling, griddle the sausages until thoroughly cooked then remove from the pan and keep warm.
Pour a little oil onto the griddle and grill the slices of sour dough until golden on both sides.
Arrange 4 slices of the grilled sourdough onto a chopping board, spread with relish, top with cooked sausages, sliced Emmental, rocket leaves and more relish before topping with the remaining slices of sourdough to create mouth watering sandwiches, Cut in half before serving.
