Chorizo and Apple Sausage Rolls

INGREDIENTS

1 packet Mallon’s sausages

100g chorizo, skins removed

1 apple, grated

1 pre rolled sheet of puff pastry (1/2 packet of Jus roll)

1 egg, beaten

1 teaspoon sesame seeds

1 tablespoon honey

1 small handful of chopped parsley

METHOD

Preheat oven to 200°C.

Remove the skins from the sausages and place the meat into a bowl along with chopped chorizo and grated apple, mix well.

Lightly dust a clean work surface with flour and lay the pastry on top. Cut the pastry in half longways, to create two long strips.

Separate the sausage mixture into two equal parts and spoon along the centre of each piece of pastry. Brush the edges of the pastry with beaten egg before rolling around the sausage meat to create two large sausage rolls, hiding the seams underneath. Cut each large sausage roll into 4 small sausage rolls.

Line a baking sheet with parchment, arrange the sausage rolls on top, lightly score the tops with a few lines and brush with beaten egg, then sprinkle with sesame seeds and place the sausage rolls into a hot oven for 25 – 30 minutes. When baked, remove from the oven, drizzle with honey and sprinkle with chopped parsley before serving.
