Food is all I know

I was seventeen when I first stood in a Michelin-starred kitchen. I still remember the heat, the noise and the pressure. That was over twenty-seven years ago, and if you had told me then that I would one day lead new product development for Arthur Mallon Foods, home to some of Ireland’s most-loved sausage brands, I would not have believed you. Fine dining teaches discipline, precision and an obsession with flavour and taste that never leaves you. It is what I have carried into every product since, whether plated for twelve people or developed for the chiller section in the supermarket.

Why Arthur Mallon Foods felt like the right next step

I started my career in high-end restaurants, where the standards were relentless and the pace was unforgiving. I loved that world, but after starting a family, I moved into the corporate side of food because the hours were more family friendly. It still kept me close to the craft but gave me a different perspective on how good food reaches people at scale.

What drew me to Arthur Mallon Foods was the energy around the place. You could feel the ambition, but also the genuine passion for food and for the people behind it. I had heard about the company’s plans, the investment going into a new state-of-the-art factory, and the ambition to build something that respected the brand’s heritage while pushing it forward. I wanted to be part of shaping that story. I joined in January 2026, and a month later we moved into the newly opened Centre of Excellence, with a development kitchen and innovation facilities that are every chef’s dream.

That mix of heritage and momentum is what makes the place special. Some of the team have helped build the Arthur Mallon Foods story from the early days. There is a loyalty, pride and depth of knowledge here that you simply cannot shortcut. Alongside them, there are new hires coming in from larger corporate organisations, bringing fresh thinking and structure. Put those together, and you get the perfect team: people who know what makes the Mallon’s brand trusted, and people ready to help take it further.

My role, and my vision for NPD at Arthur Mallon Foods

My job is simple to say and hard to do well: understand what people are craving, spot the gaps in what is already available, and help turn those ideas into products that work in real life. It is a collaborative process from the start. I work closely with operations, production, marketing, procurement and commercial, because good NPD depends on the right people being involved early. Together, we look at the trends shaping how people are eating, what shoppers are asking for, what ingredients and packaging can deliver, and what will work on the line. The best ideas are the ones that balance creativity with practicality, so we can keep developing what we offer without compromising on flavour or craft.

My vision for NPD at Arthur Mallon Foods is built on four things: protecting the heritage and craft that came before me, creating flavour worth talking about, developing formats that fit how people actually cook and eat today, and bringing the people of Arthur Mallon Foods on that journey. The best ideas have to do more than taste good in the development kitchen. They have to make sense for the people buying them, cooking them and coming back for them again.

What we’ve been cooking up

I can finally talk about some of what’s been keeping me busy in the development kitchen for the past few months.

Sausages are what the Mallon’s brand is known for. We have been making and perfecting our Original range of pork sausages for years, and that expertise gives us the right foundation to bring something new to the category. Now, we are expanding beyond breakfast with Our Kitchen, a crafted range of meal solutions designed for how people cook and eat today, and Masterclass, a range created for standout flavour, quality ingredients and a more elevated food experience.

Mallon’s Masterclass Swirls

These came from wanting to do something different within sausages, inspired by that American-style sweet breakfast moment. Pork carries sweet flavours beautifully because of the richness of the meat, so swirling fillings like marmalade and maple through the sausage, rather than simply mixing them in, helps bring that sweet-and-savoury balance through in every bite. It is a small technical challenge that makes a big difference on the plate. With brunch becoming more popular, and people looking for something that feels like a treat at the weekend, the swirls feel perfect for a slower Saturday or Sunday morning.

Mallon’s Masterclass Curry Sausages

Curry is one of the nation’s most-cooked flavours at home, so building it properly into a sausage rather than bolting it on as an afterthought sauce felt obvious once we started testing it. We wanted it to be a mild, crowd-pleasing curry, with enough warmth and spice to feel interesting but not so much that it limits how people use it. That makes it versatile, appealing to a wide range of tastes, and just as suited to a simple family dinner as something you’d happily serve to guests with fried rice. Before the launch we  organised a tasting event in the canteen for all our production and office staff, and everyone loved it!

Mallon’s Masterclass Original Sausages

Every range needs a benchmark, and this is ours. With NPD, it is tempting to chase novelty, but the classic sausage is still the product most people judge a brand on first. For Masterclass, we went back to basics, focusing on meat content, seasoning balance and texture until we had, quite simply, the best everyday sausage we could make. It has also been a passion project for Paddy Mallon, our owner, who has poured generations of knowledge, pride and care into getting it right. It is proof that heritage and innovation are not opposites; they work best when they build on each other.

Our Kitchen Sweet Chilli Pork Bites and BBQ Pork Bites

Snacking and sharing occasions have grown hugely, and these were designed specifically for those moments when people want something tasty, saucy and full of flavour. They can work as part of a tasty meal with champ and veg, tucked into a bao bun or taco, or served on cocktail sticks for easy sharing. Sweet Chilli Pork Bites bring a kick balanced with sweetness, while the BBQ Bites bring a rich, smoky depth. I love seeing people get creative with how they eat theirs.

Where I think food is heading and why this range fits

People want two things: comfort and excitement. They are cooking at home more, but they want it to feel like an occasion, not a chore; quick enough for a weeknight, interesting enough for a weekend. That is the gap this whole range sits in. Familiar formats, delivered with flavours and techniques people would not expect from a supermarket shelf. Snacking occasions are only growing, home entertaining has become more casual and more frequent, and shoppers are increasingly willing to trade up within a category when the quality is clearly there. This range meets all three head-on.

Outside the kitchen

When I am not developing recipes, you will usually find me on a GAA pitch. I referee at national level, which keeps me fit, focused and more patient than most people might expect from someone in this job. It also keeps me honest. There is no faking it in front of a crowd, whether you are refereeing a match or putting food in front of people.

At home with Orla, “the real boss”, and our four kids, life is loud and busy, but it is where I stay grounded and where I am happiest. A typical weekend involves sports matches, park runs and trying to get everyone fed before the next thing starts. It is busy, but it is the good kind of busy.

When it comes to what we develop for the Mallon’s brand, home is where I get some of my toughest critics. They will tell me straight whether something is going to be a winner or not. Food is a big part of our family life. We all love trying new places to eat, and I like seeing the kids build their own food journey too.

Food has been my constant since I was seventeen, and honestly, I am more excited about what is coming next at Arthur Mallon Foods than almost anything I have worked on before. Watch this space.
