Cooking Instructions

Make the katsu sauce

Heat the oil in a saucepan over a medium heat and soften the onion for 5 minutes. Add the garlic, ginger and carrot and cook for 2 minutes. Stir in the curry powder and flour for 1 minute, then gradually add the stock, coconut milk, soy sauce and honey. Simmer for 10 minutes, then blend until smooth. Keep warm.

Cook the rice

Rinse the rice until the water runs clear, then cook according to the pack instructions. Leave to stand, covered, for 5 minutes so it turns soft and sticky.

Pan-fry the sausages

Heat a little oil in a frying pan over a medium heat and fry the sausages for 8–10 minutes, turning occasionally, until golden and cooked through.

To serve

Spoon the rice into bowls, slice the sausages on the angle and lay them on top. Pour over the katsu sauce then finish with toasted coconut, the remaining chilli and coriander, and a lime wedge.

Tip

Toast the coconut in a dry pan for 1-2 minutes until just golden. Watch it closely, as it catches quickly.
